IT'S NEVER TOO LATE FOR BRUNCH - SHRIMP AND GRITS

I really don't know where I've been all these years when it comes to shrimp and grits, but I am so glad I've become acquainted with this dish!

It's so quick! It's so easy! It's so delicious! I added a brunch spin to this classic dish by adding an egg prepared over medium.
I like to use Nando's Garlic Peri Peri Sauce, when I want a quick fix. It creates the perfect mildly spicy sauce for the shrimp. In the photo above I made my own sauce consisting of red peppers, tomato, onion, garlic, harissa spices, and fresh hot peppers. Please see my Shrimp and Grits Homemade sauce recipe!!!!
However, a little tomato paste, your hot sauce of choice, diced tomatoes, minced garlic, and a bit if butter will do just fine!
Ingredients:
Shrimp, cleaned, de-veined, tails on
Eggs
Grits (I use quick grits, still taste good, but nice and easy)
Sauce of choice: Homemade Sauce or Nandos Peri Peri Sauce
Minced Garlic
Unsalted Butter
White cooking wine
Recipe:
First clean and prepare your shrimp leaving tails on. I leave the tails on because it makes for a more succulent juicy bite. Season your shrimp to taste. I like to use some type of salt-free garlic herb seasoning, Cajun seasoning, black pepper, cayenne pepper and a little Adobo or seasoned salt. Set aside and let it marinate while you prepare the other ingredients.
Next you can prep your grits to the package directions. Everyone likes their grits their own way.
Then heat a medium size saucepan to medium high. Add olive oil to the pan, and after it heats up saute the minced garlic until fragrant. At this point you will add your sauce. If you choose to buy a sauce, or make your own sauce, great! If not, after the garlic is fragrant add tomato paste and let that cook for a minute or two.
Turn the heat down to medium low, and add 2 tbsp of butter. Allow this to melt slowly to prevent an oily sauce. Then add diced tomato, a hot sauce of your choice (I like habanero pepper sauce). Let the tomatoes cook down a bit, then add your shrimp. Once the shrimp turns pink, add your cooking wine and reduce the heat to low. Cover and let this simmer.
Now taste your sauce, and add salt and pepper to taste, maybe some basil if you like!
Last prepare an egg or two over medium to sit on top of the grits. I like over medium because the egg yolk is delicious paired with the grits and the spicy sauce for the shrimp.
Place the grits in a bowl, and put the egg(s) on top. Pour the delicious spicy shrimp sauce on top of this, and add some parsley for a garnish.
